Wonton wrappers are my latest addiction, in the past week I have used them in several recipes. I made crab rangoon, wonton tacos and buffalo chicken wontons. These wrappers are so versatile they can be fried, baked and even used for ravioli. Wonton wrappers are available in most grocery stores in the produce section.
For this post I am sharing a recipe for BBQ Chicken and Coleslaw Wonton Cups. They are a super easy appetizer and taste great. This recipe can be adjusted to suit your taste.
Bake the wonton wrappers
Mix cooked chicken and BBQ sauce
Fill wonton cups and bake
Top with coleslaw and garnish with chopped green onions
BBQ Chicken and Coleslaw Wonton Cups
Makes 12

Ingredients
12 wonton wrappers
1 cup of cooked diced chicken
1/4 cup BBQ sauce
1/2 cup prepared coleslaw
Chopped green onions for garnish, optional
Instructions
Preheat oven to 350 degrees.
Spray muffin pan with non-stick cooking spray. Press one wonton wrapper into each muffin cup.
Bake wontons in oven for 5 minutes. Set aside and do not removed the wontons from the muffin pan.
Mix diced chicken and BBQ sauce, stir to fully coat chicken. Adjust the amount of BBQ you use to suit your taste.
Place a spoonful of the chicken into each prepared wonton cup.
Bake for 8 - 10 minutes or until chicken gets warm and the wontons start to brown.
Place a spoonful of coleslaw on top of the chicken, just enough to suit your taste.
Garnish with green onions.

Notes: Substitute the chicken for pulled pork. Also the coleslaw is going to cool down the chicken, so add the coleslaw right before serving. They can be reheated in the microwave.
Timesaving tip: Bake the empty wonton wrappers at 350 for 10-12 minutes or until golden brown. Store in airtight container for up to 3 days. Reheat BBQ chicken before filling the wonton cups. Add coleslaw, green onions and serve.
